Apple Pie Crock Pot French Toast- gf/cf

 

This recipe was perfect for a cool, fall morning. Prepare it the night before, and cook it in the morning. A nice treat for my gluten/dairy free family members.

I used 14 oz of whole grain gluten free bread (I used Udi’s). This is a little more than a full loaf. I did this because with the addition of the apples there is a little more juice released then if you did the plain french toast.  The addition of the extra bread helps absorb it. You could also cook it longer and eventually the liquid will be gone, but the edges might be burnt.DSC00560

Ingredients

14 oz. Whole Grain gluten free bread, cubed

1 can coconut milk, full fat

6 eggs

1 T apple pie spice mix

2 medium, sweet apples, peeled and cubed (I’ve used Gala and Fuji apples)

1/2 t cinnamon

Topping-

**1/2 cup coconut sugar or golden monk fruit sweetener crystals (I like the coconut sugar taste, but this time I used half/half to reduce the sugar impact)

1/2 t cinnamon

dash of nutmeg

**real maple syrup

Place the coconut milk, eggs, and spices in a large bowl. Mix well. Stir in the cubed bread, coat thoroughly. Don’t over stir, the gluten free bread may fall apart. Cover and place in refrigerator overnight.

In the morning, peel, and chop the apples, coat with cinnamon, mix well. Chopping smaller pieces will ensure softer apples than chopping bigger pieces. I liked having a little texture left in my apples.

Place into greased crock pot. Combine coconut sugar, cinnamon and nutmeg. Sprinkle evenly over bread mixture.

Cook on high for 2 hours or low for 4 hours.

Enjoy! You only need a drizzle of maple syrup.

**I think the recipe is sweet enough with just the apples and the coconut sugar or monk fruit on top. However, if you know you will be slathering it with maple syrup, you might want to omit the sugar on top, you don’t really need both. I use a small drizzle just to give a maple taste to the apple pie.

That hit the spot. Next time, I’ll have to attempt a pumpkin pie version.

  1. What kind of gluten free bread do you use. Or do you make your own. I’m going to try this my next day off from work.

  2. I used Udi’s whole grain. I’ve also done it with Udi’s white. The little loaves are only 12 oz though. I usually get the big loaf from Costco. I would imagine it could work with any gluten free bread. You just have to make sure you give it time to soak, I found the gluten free breads don’t absorb the egg as quickly as regular bread. Let me know what kind of bread you use and how it turned out.
