This week I used the last zucchini in the garden. I used it to make this sweet bread recipe. It is tasty and moist with lots of good things in it like zucchini, apples, raisins, flaxseed walnuts, cinnamon and other spices. To get the full, original recipe (click here). It can be found on Healthful Pursuit by Leanne Vogel. I’ve made this recipe several times and each time it turned out great. I occasionally alter the recipe and it still is tasty.
- for oil -used avocado oil, because that is my oil of choice
- potato starch- used tapioca starch because that is what I had on hand
- coconut sugar- used half and substituted half with xylitol, (stick with coconut sugar for topping)
- non-dairy milk- almond, coconut, flax milks have all worked if you don’t have hemp milk.
