Tasty Mashed Cauliflower

If you’re trying to cut back on the carbs of mashed potatoes, mashed cauliflower is a good alternative.  It makes a great side dish that doesn’t  feel like you’re eating vegetables. You could also have a bigger serving and make it your lunch. This recipe is gluten and dairy free. I use the nutritional yeast to give it a cheesy flavor.

Ingredients

1 large head of cauliflower

1 teaspoon minced garlic

1/4 cup nutritional yeast

2 Tablespoons Earth Balance Soy Free buttery spread or ghee (or butter if you’re not dairy free)

1 Tablespoon fresh chopped parsley (or 1 teaspoon dried)

1 Tablespoon chopped chives

1 teaspoon salt

1/4 teaspoon fresh ground pepper

almond milk (or other dairy free milk)

salt and pepper to taste

Cut the cauliflower head in half (I can only fit half a head in my food processor at a time). Shred cauliflower in food processor. Place in microwave safe glass bowl. Cover. Microwave for 8-9 minutes depending on your microwave strength. You want the cauliflower to be soft (not crunchy) so it will blend smoothly. Do the same with the other half.

Let the cauliflower cool enough to handle. Burning your hands is not fun. Been there, done that. 😖 Using a cheese cloth, squeeze the water out of the cauliflower. This part helps avoid having watery mashed cauliflower. Place back in food processor. All the cauliflower will fit this time.DSC00398

Add the garlic, nutritional yeast, butter substitute, parsley, chives, salt and pepper.

Blend in food processor until smooth. This may take a minute or two depending on how well your cauliflower was cooked.

Add milk a little at a time until desired consistency is achieved.

Add salt and pepper to taste.
