Quick and Easy Sausage and Peppers

Sausage and peppers is a dish you can put together quickly after a long day. This basic recipe keeps the ingredients and calories to a minimum. Use your favorite sausage. It works with sweet or spicy sausage, or use a healthier sausage like chicken and sweet pepper sausage. Put this on a crusty gluten-free roll or over a bed of wild rice. I like to eat it on its own with a salad. You’ll notice I don’t use extra oil in this recipe. I just saute the onion and peppers in the fat from the sausage.

Ingredients

6 of your favorite sausage (I used sweet Italian sausage this time)DSC09391

1 red bell pepper

1 yellow bell pepper

1 orange bell pepper

1 onion

1 clove minced garlic

salt and pepper to taste

Crusty gluten-free roll or wild rice

Brown sausage in a large skillet. Slice up sausage and return to pan to finish cooking. Remove sausage from pan, leaving the fat. Add the onions and cook until translucent. Add peppers and garlic. Cook until tender. Add sausage back. Add salt and pepper to taste. Heat through. Place on a crusty roll or over rice. So easy!
